Abstract

Lactic streptococci are extremely fastidious bacteria. For growth an exogenous source of amino acids and other nutrients is essential. The amino acid requirement in milk is fulfilled by the milk-protein casein, which is degraded by sequential hydrolysis, involving proteases and peptidases. ... Zie: Summary
