Abstract
Leafy vegetables, like spinach, may contain high concentrations of nitrate. In the Netherlands, about 75% of mean daily intake of nitrate orginates from the consumption of vegatables. Hazards to human health are associated with the reduction of nitrate to nitrite. Acute nitrite poisoning causes methemoglobinemia: nitrite binds to haemoglobin and reduces teh O2 transport. Chronic nitrite poisonig may be caused by carcinogens, wich are formed from nitrite and secundary N-compounds. ...
